This one is a good one for overly ripe bananas that you don’t want to throw away, and they’re really easy to make. This is just a guideline so you can jazz it up – or down – however you like.
It makes 10-12 pancakes for 2 people (or 1 very hungry person!)

10 minutes cooking time.
⁃ 3 ripe bananas
⁃ 2 medium eggs
⁃ 1 tablespoon of ground almond (optional – this helps the pancakes hold together better)
⁃ A pinch of cinnamon (optional)
⁃ A couple of drops of vanilla essence (optional)
⁃ Honey/syrup of your choice for topping e.g. maple syrup, golden syrup
⁃ Fruit of your choice for topping e.g. banana, berries, coconut flakes
⁃ Coconut oil (or sunflower oil) for cooking. You’ll need about half a tablespoon for every 4 pancakes
1. In a measuring jug, mash bananas with a fork and whisk in eggs.
2. Add cinnamon, ground almond and vanilla essence to the mix and stir it in well.
3. Heat oil in pan.
4. Pour small amounts of the mix from the jug into the pan and turn to a medium heat. Cook on one side for 4-5 mins then flip and cook on other side for 4-5 mins.
5. Serve up with syrup and/or fruit of your choice and enjoy!
