I started my new job last week and because I’m doing longer hours I’ve opted to actually take my lunch break. I’ve also promised myself that I’ll take food in too so I can save, which means I’m getting creative in the kitchen again. Now, I’m all for quick, easy, all-in-one meals and I usually experiment with some sort of carb as a base and veggies and this is what I came with. This is a proved and tested recipe. You cannot go wrong. Literally, just follow the instructions on the box! God bless Betty Crocker – haha! And for the icing/frosting, I followed this recipe, with an added drop of vanilla essence and gel blue food colouring. Enjoy! 🙂   P.s. You could experiment with the mix by adding flavours, for example cinnamon and nutmeg, and food colouring, and topping it with sweets or chocolate. Get creative!

Inspired by the Ghanaian background, I present to you oil rice. The ultimate side dish when you want to make your meals a little more fancy (because even ordinary boiled rice can get boring!). This takes 25 mins to make and will serve 2/3 people. Besides the rice and water you’ll cook it in, you’ll need oil (sunflower or coconut) and half of an onion. So easy, you could make this with your eyes closed! Whenever I have a smoothie, it’s usually as a snack as soon as I get home from work. The snack of all snacks at EVERY function and gathering, christening or wedding, memorial service or birthday. This recipe makes enough for as many as 50 people or as little as one person. Once made it keeps for 1-2 weeks co it makes the perfect at work or school snack.
